<image:title>Blog - Pumpkin Muffins, Pancakes, & Buttermilk Syrup…Oh My!</image:title>
<image:caption>We’re going to start with our pumpkin muffins. Now, these have two base ingredients and then you can add whatever else you want. It’s a chocolate cake mix and a can of pumpkin. Yep, that’s it. Do not add the oil, water, or eggs to the cake mix. You just want the dry mix. We add chocolate chips, you could add chopped nuts, those cinnamon chips, coconut, really anything. And they don’t taste super pumpkin any - it’s just a very dense chocolate cake. Follow your cake mix baking directions. The one I used from Aldi called to bake cupcakes at 350 degrees for 18-21 minutes.</image:caption>

<image:title>Blog - Pumpkin Muffins, Pancakes, & Buttermilk Syrup…Oh My!</image:title>
<image:caption>Now on to the Pumpkin Pancakes. Using your favorite pancake mix measure out enough mix to make 18 - 21 pancakes, so for my mix it’s 3 cups. You’ll probably have to play a little with this one based on your pancake mix. But for me it’s 3 cups of mix, one can of pumpkin and then I just add the water until I get to the right consistency. If you are the type of person that needs exact measurements well….buckle up buttercup because we’re getting a little crazy with this one and you’ll be okay. So mine calls for 2 cups for water, but I’m going to start with a cup and then add it from there until I get the right consistency. The batter needs to stand for about 2 minutes which is a great time to make your syrup because it’s just that easy.</image:caption>

<image:title>Blog - New Favorite Easter Tradition - THIS IS IMPORTANT!</image:title>
<image:caption>Make them smaller than you think you need to make them. I’m talking small. Like the size a grape. When they say 1 inch balls, they mean it. These wonderful, juicy, savory, yummy dumplings are going to soak up that delicious broth and swell up. Once they are done you can add all your veggies and chicken back in and serve. Now how much of this you make is really up to your taste. I end up using about 8 cups of broth because I usually have to add a little before I make the Matzo Balls. They soak up a good bit and some usually boils off while I’m cooking the veggies. Pinterest is a wealth of resources when it comes to this soup and I’m sure you can find the recipe that sounds the best to you. Again, my recipes tend to be more like guidelines. Any way you make it I’m sure it’ll be delicious.</image:caption>

<image:title>Blog - New Favorite Easter Tradition - On to the chicken. I don’t really have a recipe for my Matzo Ball Soup. I use bone-in skin-on chicken thighs. Not only does it give the soup a great flavor, but it gives me a yummy seasoned fat to use in the Matzo Balls.</image:title>
<image:caption>The key to the soup is a well seasoned roasted chicken. I cover these in Italian Seasoning, Jane’s Krazy Mixed-Up Salt, and some olive oil. They roast in the oven until done and then I set them aside until they are cool.</image:caption>

<image:title>About - Long story…..long…</image:title>
<image:caption>Here's the detailed, long-winded, story of our journey to reclaiming abundant living. Family heirlooms, decorative items, Christmas decorations, items from our childhoods, furniture that we loved, good deals that we scored, projects we wanted to complete, and items that were difficult to part with for any number of reasons. You name, we had it. In 2016 our square footage per person shrunk significantly! We added three sweet little boys to our family through adoption, and suddenly the amount of stuff we had seemed to double. So in 2017 we moved to a much larger house, packed up most of our stuff into a moving truck and two storage units, and doubled our square footage. But, as it always does, history repeated itself. We were again in a state of abundance, but it had become clear that it is the wrong kind of abundance. The cost of our stuff has been great. I am on a mission to reclaim what abundant living really looks like, by simplifying our home and household schedule. Jesus tells us in John 10:10, "The thief comes only to steal and kill and destroy. I came that they may have life and have it abundantly." I can't help but think that when Jesus said “life abundantly,” he didn't mean jammed pack schedules, boxes of high school yearbooks and trinkets from 5th grade. I want to live a life that brings glory and honor to God. I want to shepherd my kids hearts and be a helper to my husband. But I can't do that living in the wrong kind of abundance. If you're like me, it may have taken a while to figure out the cost of all this stuff, in which case you are in good company. I hope you'll join me and I look forward to taking this journey with you!</image:caption>
